Peas soup with apple and quinoa

I know it’s spring and the temperatures have soared in the last few weeks but soups are always ‘in’. Therefore I am sharing with you this recipe for a delicious peas soup with apple and quinoa that I made a while ago. You might think that the taste of it is a little bit exotic but you would be surprised how well peas and apples actually go together. 🙂

Here is the list of ingredients you’ll need:

200g of peas

1 small apple – use apple that has a sour taste like granny smith, which I used, otherwise the soup will have a sweet taste.

3 tablespoons of quinoa

salt

parsley

onion (you will need just a few pieces)

olive oil

Take a bigger cooking pan and put it on the stove, warm it up a little and then add some olive oil and sliced onion. Stir it and wait till it turns yellow then add peas and a sliced apple. Stir again, leave for a few minutes and then add water. When it starts boiling remove the pan from the stove and use a hand blender to mix it all together till you get a creamy consistency. Return the mixture back on the stove and add quinoa then let it simmer on low heat for 10-15 minutes or till quinoa is cooked. At the very end add salt, parsley and other spices of your choice.

Grahova juha z jabolkom in kvinojo

Vem, da je pomlad in da so temperature v zadnjih tednih narasle, a juhice so vedno ‘in’. Zato delim s tabo ta recept za okusno grahovo juho z jabolkom in kvinojo, ki sem jo pripravila pred kratkim. Mogoče si misliš, da je okus nekoliko eksotičen, a presenečen/-a boš, kako dobro gresta skupaj grah in jabolko. 🙂

Tukaj je seznam sestavin, ki jih boš potreboval/-a:

200g graha

1 malo jabolko – naj bo kislega okusa, tako kot so jabolka granny smith, ki sem jih jaz uporabila, sicer bo juha imela sladek okus.

3 jušne žlice kvinoje

sol

peteršilj

čebula (le nekaj koščkov)

olivno olje

Vzemi večjo posodo in jo daj na kuhalnik, zagrej jo nato pa dodaj malce olivnega olja in čebulo. Mešaj in počakaj, da čebula porumeni, nato dodaj grah in narezano jabolko. Malce pomešaj, dodaj vodo in počakaj nekaj  minut, nato dodaj vodo. Ko le-ta začne vreti, umakni posodo z ognja in vse skupaj zmiksaj s paličnim mešalnikom, da dobiš kremasto teksturo. Vrni posodo nazaj na kuhalnik in dodaj kvinojo. Vse skupaj naj se kuha še 10-15 minut oziroma toliko časa, da se kvinoja skuha. Na koncu dodaj sol, peteršij in druge začimbe po želji!
